Remember These?





Hello June!   Today is like Summer at my house.  The sun is shining. The birds are out. It’s a weekend. Simply a good day all around!  Today I noticed that the most viewed post on my blog is for my pickled vegetable recipe. One of my own favorites and one that I seem to always start making on these beginning days of Summer when it feels like picnic weather.

Today I stopped at the fruit market on the way home and picked up a few things to pickle:  cucumbers, carrots, red bell pepper, green onion, garlic, green beans, and jalapeno pepper. I cleaned it all, put it in a 1/2 gallon mason jar, then poured the hot brine over.

Doesn’t that look delicious? Now I have to wait until tomorrow to test out the goodness, and it smells heavenly!

Feel free to make adjustments for taste. Sweeter? Add more sugar. Hotter? Slice in a couple peppers of your choice. You can even try different types of vinegar; substituting red wine vinegar or rice vinegar. It’s a very easy recipe to customize.
