Comfort Food

It’s been quite a while since I posted any new recipes. Today I’m sharing one that’s all mine – meaning no cookbook, no internet search, just me playing in the kitchen. OMGosh it’s really yummy, so I hope you’ll try it.



2 tbls. oil

2 cups chopped sweet onion

4 cloves minced garlic

1.5 lbs boneless chicken thighs – cut in bite sized pieces

1 tablespoon yellow curry powder

1 tsp Salt

1 tsp pepper

2 tsp chili powder

1/2 tsp oregano

2 cans white beans – one drained, one undrained

1 large or 2 small can diced green chili peppers

2 cups chicken broth

1/3 cup creamy peanut butter

Use a large dutch oven/stew pot.  Heat oil. Sautee onion 2-3 minutes. Add garlic and chicken thighs. Sautee, stirring often, about 5 minutes until chicken begins to turn white. Add curry powder, salt, pepper, chili powder, oregano, beans, chilis, and chicken broth. Mix well.  Bring to a boil, reduce heat to medium low, partially cover and simmer slowly for a couple hours. Stir in peanut butter and serve.

Suggested toppings:  Sour cream, shredded cheese, guacomole, hot sauce.
